Ingredients:
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns
1 tbsp fennel seeds
8 cloves
5 green cardamom pods
2 black cardamom pods
1 small cinnamon stick
1 bay leaf
¼ nutmeg (grated)
1 small mace blade (javitri)
Instructions:
Dry roast all spices (except nutmeg) in a pan on low heat until fragrant (1–2 mins).
Let cool completely.
Grind to a fine powder.
